Clos Mimi

Established in 1996 by Tim and Mimi Spear, Clos Mimi is a "très petite" winery located in Santa Maria, California. Clos Mimi is French for "Mimi's enclosed vineyard" expressing Tim's timeless endearment to his children's mother, his wife, his business partner, his best friend and his soul mate. Inspired by the greatest "monocépage" wines of Burgundy, Côte Rotie and Hermitage, Clos Mimi is committed to vineyard designated, one hundred percent Syrah farmed by small family growers in Paso Robles and Santa Ynez.

THE LOVE STORY BEHIND CLOS SOLÈNE

At first, and we are talking when he was 5 years old, Guillaume was into winegrowing, following his father everywhere on their property in the Languedoc-Roussillon. But as he grew up he would be interested in what was happening to the grapes he had been helping to grow and got into winemaking as well. After graduating from Oenology and Viticulture in Carcassonne, his parents moved, selling the family property to buy a new one, in Bourg, a village near Bordeaux. Disappointed, Guillaume stayed in the Languedoc and visited his parents on weekends but not convinced to move… until he met her.

But they had different lives to live. She had to go to Spain and he had to go to California. Alas, their love survived the distance and they faced the obstacles together so that when he asked her to move with him to Paso Robles, refusing to take on the family property but instead developing his own brand, she knew his passion for wine would take them somewhere - she would just have to follow him and trust him. This is how, in 2007, they started Clos Solène. It isn’t all smooth and easy, but Guillaume works still with the same passion, which he claims is alive because the love of his life has faith and trust in him.

Copia Vineyards and Winery

The story of Copia Vineyards begins with the passion of Anita and Varinder Sahi, their shared love of wine, and the beauty of its source. The Sahis each had different paths to this world. He has an engineering and business background, and she is a restaurant and marketing veteran. He globetrotted for work and his love for wine grew. She worked with some of the finest restaurateurs and Michelin-starred chefs, cultivating her zeal for fine food and wine. 

In 2017, the Sahis’ search for a special site to produce world-class Rhône and Bordeaux varietals was successful. They became the proud stewards of 50 acres of paradise-on-earth in the Willow Creek District of Paso Robles. It is now a veritable winemaker’s dream with nearly 40,000 vines planted in 24 distinct blocks. In 2022, their estate grew to include 26 acres of dramatic landscape in the Adelaida District. Both vineyard sites have breathtakingly beautiful slopes, calcareous soils, and strong marine influence. Simply put, the Sahis believe that these vineyards are legendary. The vines on the Copia Estate are now producing some of the most abundant, concentrated fruit with densely rich varietal characteristics.


The word Copia is a Latin root word that means abundance or plenty. It’s an apt name for a winery that is created by two people who have always chased the glass half full.

Cordant Winery

David and DeAnn Taylor founded Cordant Winery in 2014 to produce Pinot Noir and Rhone-style wines that would become favorites in their cellar, and hopefully those of friends, family, and customers. Today the Taylors make about 3000 cases of wine per year, from Monterey County in the northern California Central Coast moving south through Santa Barbara County, a distance that covers almost 200 miles.

Costa De Oro Winery

Costa de Oro Winery’s mission is to produce the finest wines from the Central Coast using the artistry of Old-World winemaking styles and New-World grape growing practices. We were driving into Santa Maria to do some wine tasting and spotted it right off the freeway. A nice tasting room, with great wine items to shop and purchase as well.

The wine hostess was great and made recommendations on where to go next.

Cottonwood Canyon

The estate is currently planted to 18 acres of Pinot Noir, five-acres of Chardonnay and three-acres of Syrah. The vineyard continues to be managed row-by-row and vine-by-vine. The long honored and labor intensive tradition of hand -harvesting continues with the expertise of Vineyard Manager, Jerry Ortiz.

Chris’ journey into wine-making was circuitous. His curiosity was first piqued in the 1990s after visiting Napa for wine tasting. Years later, he started frequenting Paso Robles and fell in love with the people, the food, the wine, and the overall beauty of the area. After his children left for college, he sold the family business and relocated to Paso Robles in 2013 and dug right in. He planted a vineyard in Templeton consisting of Cabernet Sauvignon and Syrah. He went back to school and studied both viticulture and Oenology while serving as an intern at multiple wineries. After making wine at home for several years, he finally decided to make the leap and open our tasting lounge in downtown Paso Robles. 
 

CRUSH Vineyard

After 30 years in the Fashion industry in New York City, Denise and Scott Schramm followed their hearts and daughters to California.  Denise and Scott are longtime wine enthusiasts and have always dreamed of owning a vineyard.  Traveling to Napa Valley since the early 90’s indulging their thirst for Cabernet Sauvignon this couple fell in love with California wines and the beauty of wine country. The Schramm's are also fortunate to have traveled to Europe and developed a fondness for the Italian Super Tuscans, Spanish Riojas, and France’s wines from the Bordeaux and Rhone regions. Nothing made them happier than gathering with friends and family sharing stories, good food, and great wine.    

The dream became reality when this couple purchased an established vineyard on the West Side of Paso Robles in the Adelaida District. The vineyard was known for growing award-winning Tannat and Tempranillo, two varietals that follow their “Road Less Traveled” philosophy in winemaking. At CRUSH Vineyard, the focus is on small-batch, hand-crafted red wines which are Estate grown on our family vineyard. Always sustainably farmed and handpicked.

The very first bottling, to commemorate the wedding of our oldest daughter Phoebe was a special blend of Tannat and GSM. This blend was named INCEPTION to mark the start of the new couple's life together, and the beginning of Denise and Scott's winemaking adventure.
