Ambyth Estate

Painting of person enjoying a glass of wine

AmByth is the Welsh word meaning 'forever'. We view it as our legacy: to live and farm to our heart's content in Templeton for the remainder of our lives...but also to farm with the future in mind, and the healthy condition of our land being left behind. AmByth Estate is Paso Robles' first and only winery to produce Demeter-certified Biodynamic wines. We utilize the Biodynamic method of farming to enhance our observations of nature, and use these intimate insights as tools that allow our 20 acres of vineyards to express their true character through the grapes it produces. We want our grapes to be as unique to AmByth Estate as your thumbprint is to you.

Most of the 2000 case annual production is sold to a mailing list on a first-come basis. Part of each offering is a very limited amount of the Cabernet made ten years earlier, as an illustration of the ageworthiness of our wine. The balance is split between a broad but thin presence in many of the well known wine stores in the U.S., and a definite presence in almost all European countries together with the principle Asian markets.

If that's the case, Tom or Linda will arrive shortly to open for your private tasting.

Grown on over 1000 acres in Monterey County, the diverse vineyards of Hahn Estate make up some of the best Pinot Noir, Chardonnay and Syrah plantings in the region. The unique qualities of the vineyards coupled with the sunny days and foggy nights helps to create wines of depth and complexity.

At Hahn Family Wines, a family-owned and operated winery, founders Nicky and Gaby Hahn arrived in the Santa Lucia Highlands in the late 1970s. The Swiss-born couple swiftly identified the area's capacity to yield wines with remarkable nuance and character, deserving recognition on a global scale.

They expressed their vision: "We produce world-class fruit from meticulously managed vineyards. Therefore, we merit recognition through our own premium pricing and an exciting appellation that wine writers can discover, acclaim, and celebrate."

Punk Dog Wines

Punk Dog Wines represents an adventurous approach to winemaking. The goal is to craft wines with immense character, bold flavors, and unconventional blends. Fully embodying a Californian spirit, Punk Dog Wines refuses to be constrained by traditional blends or preconceived notions.

The name "Punk Dog" is inspired by Sophie, a small dog with a larger-than-life personality. Mischievous and strong-willed, Sophie is known for her playful antics, like running around with a stolen sock and rewarding her pursuers with enthusiastic kisses.

When establishing the winery, the founders questioned the necessity of using grapes from the same region or adhering to conventional blending practices. They explored the effects of combining varietals that might not traditionally be paired and blending grapes harvested at varying ripeness levels.

The philosophy behind Punk Dog Wines was influenced by a cellar master’s advice during the founder’s first vintage. After enduring long days of labor, the cellar master remarked in his Bulgarian accent, “Eric, smile! You’re making wine!” This perspective of taking winemaking seriously while maintaining a sense of fun has become central to their approach.

Sophie, with her bold and adventurous nature, is the perfect mascot for the winery. Reflecting the same spirited attitude and sense of adventure, the team’s goal is to create outstanding wines while enjoying the process. With the work done and the “cows home,” the invitation is simple: relax, enjoy the wine, and share in the fun.
