Late Harvest Sauvignon Blanc

Late Harvest Sauvignon Blanc

Dolce Winery

Napa Valley's Dolce Winery is the only winery in North America that is solely devoted to producing a single, late harvest wine. It is one of the few wineries in the world willing to make such a commitment, sharing a common philosophy with the great Sauternes producers of Bordeaux. Dolce cellar is located within the caves of its sister winery, Far Niente, in California's Napa Valley. Visitors to the winery are welcomed with a hosted tour, followed by a tasting of current and library vintages. By its nature, Dolce is a rare wine that cannot be produced every year. Dolce is made when a natural, beneficial mold called botrytis cinerea attacks the grapes on the vine, while evaporating the water content and concentrating the sugars, acids and flavors. The inaugural 1985 vintage yielded only six barrels, and production grew to nine barrels in 1986. The 1987 vintage was not fine enough to be bottled and 1988 was so warm that no botrytis formed and the grapes were never harvested. The 1989 vintage was the first commercial release of Dolce and it was introduced to the market in 1992. Visits are by appointment, only.

Silver Pines Vineyards

Located at 900’ elevation overlooking nearby Bennett Valley, on the northwestern flank of Sonoma Mountain, Silver Pines vineyard is well situated to yield pinot noir clone 115 of uncommon complexity. Planted in 2000 by owners Norm and Carole Silverman, the vineyard has a cooler microclimate dominated by infusions of morning fog, followed by warm afternoons tempered with brisk afternoon breezes as the fog courses back in through the Petaluma Gap by nightfall.

Wilson Fleming Estate Wines

Edith Wilson and Tony Fleming launched their winery in 2002 and, already, these highly acclaimed wines are winning significant awards. Emphasis is to handcraft small lots of Cabernet Sauvignon and Syrah wines from estate-grown fruit and Sauvignon Blanc wine from select vineyards in the Russian River and Dry Creek Valleys.

Robert Mondavi Winery

As one of the oldest wineries in Napa Valley, Robert Mondavi Winery innovated many winery technologies that were later adopted by other wineries in the area. Our tour guide went in depth about the history of the winery and showed us different ways of twirling our classes and trying various wines. For me, I felt as if I attended a informative wine class and tasted several great wines.
