Meet Niels and Bimmer Udsen, the dynamic husband-and-wife duo behind Cas­toro Cellars, a fun and inviting winery that has been making waves in Paso Robles since 1983. Their journey began with a simple dream: to create world-class wines from the beautiful grapes of the Paso Robles appellation.

Niels, a Ventura native, first dipped his toes into the wine business while studying Agribusiness at California Polytechnic University in San Luis Obispo. His passion for winemaking, combined with Bimmer’s unwavering support, led them to establish their very own winery in the heart of this thriving wine region.

But the path to success wasn’t conventional. The Udsens embraced what they fondly call the “backwards approach”: they started by making and selling wine, then acquired their own equipment, and finally built their winery and tasting room. Talk about an adventure!

You can visit Cas­toro’s charming tasting room in Templeton, right off scenic Highway 46 West, while their winemaking facility is located in San Miguel on the East Side of Paso Robles—both opened their doors in 1990. With the mentorship of Tom Myers, Cas­toro Cellars’ talented winemaker, the Udsen family has transformed from crafting a few barrels for friends and family into a thriving business.

Today, Cas­toro boasts over 1,400 acres of estate vineyards, all certified organic and SIP certified. Niels and Bimmer have built a brand that reflects their values, focusing on approachability and environmental consciousness. Niels' father, a Danish immigrant and successful businessman, instilled in him a deep appreciation for agriculture and entrepreneurship, which shaped their winery’s foundation.

Niels discovered his love for the wine industry during a senior marketing project for a local winery at Cal Poly. After marrying Bimmer in 1981, he honed his winemaking skills in the cellar of Estrella River Winery, learning every aspect of the craft for five years under the guidance of Tom Myers.

In 1983, armed with experience and a sense of humor, Niels and Bimmer launched Cas­toro Cellars, named after the Italian word for “beaver” (Niels’ long-time nickname). Their motto, “Dam Fine Wine,” perfectly captures their playful spirit!

Cas­toro Cel­lars isn’t just about great wine; it’s about family values, too. Their welcoming tasting room is family-friendly, even offering alcohol-free Zinfandel grape juice for the little ones. Plus, the Udsens prioritize a work environment that understands the importance of family flexibility for their employees. Founded in 1996, DuMOL is committed to crafting highly nuanced, vineyard-focused Pinot Noirs and Chardonnays from distinct sites in the cool-climate Russian River Valley. The winery is led by Winegrower and Partner Andy Smith, who oversees a small, experienced team dedicated to producing wines of depth, clarity, and elegance through meticulous attention to detail in both the vineyards and vintage-specific winemaking.

DuMOL operates on the belief that the best fertilizer is the footsteps of the farmer, and is devoted to maintaining a portfolio of estate and grower-partner vineyards primarily within a 10-mile radius. Building on over twenty-five years of experience, DuMOL also cultivates and produces small-lot Syrah, Cabernet Sauvignon, Chenin Blanc, and Mencía from some of the finest vineyards in Sonoma and Napa.

The full range of DuMOL wines is available through allocations to the mailing list, with select offerings distributed to top restaurants worldwide.

Forgotten Barrel Winery

Forgotten Barrel offers a wide selection of premium hand-crafted wines using fruit sourced from Napa, Sonoma, Central Coast and San Diego County. The reincarnation of the former Ferrara Winery has transformed this once-forgotten homestead into a tranquil rustic hideaway in the city. Our winemaker, John Eppler, hails from Northern California, having worked in Napa for Robert Mondavi, Rosenblum Cellars, and his own brand, John Robert Eppler Wines. Visitors are sure to enjoy a friendly and relaxed wine tasting that will long be savored.

I had a fantastic experience here. Went during the off season, which helps, as there was no traffic whatsoever. Staff was very helpful, talkative, and positive. Some seriously good Pinot Noirs, as to be expected.

Matini & Prati Wines

Martin Ray Winery's Founder Courtney Benham acquired the historic Martini & Prati winery in July, 2003. The tasting room structure, which dates back to the 1900's, used to serve as a stable and bunkhouse where Italian immigrants stayed during harvest.

Surh Cellars, a producer of premium hand-crafted wines, has been rooted in Napa Valley since 1999. The winery specializes in crafting small batches of age-worthy wines sourced from distinguished vineyards in Napa, Sonoma, and beyond. Their wines are made with minimal intervention and without compromise.

Surh Cellars aims to create balanced yet concentrated wines that capture the fruit and character of each vintage and region. From the full-bodied, intense Cabernet Sauvignon to the softer Bordeaux blend Mosaique and versatile Pinot Noirs, their wines are designed to complement food and be enjoyed frequently with loved ones. With production limited to only a few hundred cases per batch, Surh Cellars' wines are truly handcrafted, reflecting the passion behind each bottle.

The wines of Surh Cellars are the result of an ongoing evolution. Since 1992, they have witnessed the industry's transformation, shaped by factors like Mother Nature, consumer preferences, critics, and technological advancements. This journey has been one of constant learning. As climate change has altered the suitability of various regions for fruit growing, Surh Cellars has adapted, focusing on coastal areas as inland regions have become less hospitable. Over the years, they have produced a wide range of varietals, including Cabernet Sauvignon, Cabernet Franc, Zinfandel, Pinot Noir, Merlot, Syrah, Malbec, Sangiovese, Sauvignon Blanc, Viognier, and Chardonnay.

Tasting Room
Note that the Manzoni Cellars tasting room in Carmel-by-the-Sea has moved. The tasting room is now located in Hampton Court on 7th Ave between San Carlos and Dolores. Enjoy the spacious Courtyard. The new tasting room is spacious and inviting. You can always visit the tasting room in the vineyard on weekends. Located on the beautiful River Road Wine Trail in the Salinas Valley with wonderful views of the Santa Lucia Highlands.

A beautiful fall afternoon sitting on the picnic table with 6 bottles of PInot Noir just waiting to be tasted. A tasting at Ancien is a very personal experience. It was just the two of us as the gentleman pouring walked us through their philosophy of wine making. A tour of the barrel cave and a walk through the vineyards tasting a few grapes off the vine . We enjoyed every drop and were soon members waiting for our first shipment. Great wine and very nice people. By appointment only, call ahead, your will not be disappointed

Bogle Vineyards

Bogle Winery is tucked into the Sacramento Delta among 1,200 acres of vineyard land and sits along side of Elk Slough in Clarksburg, California. Our tasting room, which overlooks the Bogle Home Ranch, is the perfect setting for a quick get away from either the Sacramento Area or the Bay Area. The lush lawn area, nestled between the tasting room deck and the vineyards, makes for the perfect picnicking spot.
