In 1996, the husband and wife winemaking team of Michael and Anne Dashe founded Dashe Cellars. Focused on crafting exceptional single-vineyard wines, Dashe Cellars blends the two winemaker’s combined 40-plus years of experience at such noted wineries as Château Lafite-Rothschild, Château La Dominique, Ridge Vineyards, Cloudy Bay, Far Niente, Chappellet, and Schramsberg Wine Cellars. Drawing on this wealth of experience, the Dashes create vineyard-focused wines that capture the complexity and character of top vineyards throughout Sonoma County and beyond. 

Adastra Winery is organic with a great history, and Chris is happy to walk you through it. He'll introduce you to the property -- which he and his wife live off of -- and the business as well. The property is wonderful, and you can tell a lot of love has built the place up. He'll share with you the old barn and his herb garden. You'll become familiar with the origins of the name and finally, with the wines themselves while sitting around his dining room table. The reds are excellent, absolutely top-notch. On our trip, my wife and I only joined two wine clubs, and Adastra Winery is one of them. The tasting and tour can be expensive, $25 per person but that fee is waived if you join the wine club. We tasted: 2008 Dry Creek Zin - Old vine zinfandel, fruity with oak notes. I tasted pomegranate with some spice. Very enjoyable (too bad there isn't much left!) 2008 Oak Hill Estate Zin - I liked this zin. The grapes are grown on property. Hints of vanilla & caramel with the fruit upon first whif. Then a very silky mouth feel with plum and spice. We all agreed this would pair well with eggplant or other roasted/grilled veggies. 2008 Calistoga Cab Sauvignon - The bottle we tasted had been opened late the day before which helped soften the tannins. Hints of cherry on the palate. 2006 Napa Valley Cab - I liked this more than the 2008 from Calistoga. It was balanced acidity/fruit. 2010 Michael's Muse - Delicious tawny port style wine that they had just bottled! Complex fruit, not too over-poweringly sweet. I think it had zin & petite syrah grapes (I wasn't paying as much attention). Very good!

You will find in the picturesque rolling foothills of the Santa Lucia Mountains near Paso Robles, California, lies a contemporary gem of a winery owned by the Hoffman family. Operated by Dr. Stanley Hoffman and his two sons, David and Michael, this idyllic winery boasts 12-year-old vineyards perched at elevations of 1,400 to 1,800 feet, all dedicated to producing premium estate-bottled wines.

The story of this remarkable winery dates back to 1964 when Dr. Hoffman first planted French varietals like Chardonnay, Pinot Noir, and Cabernet Sauvignon. He discovered that the unique climate, terrain, and chalky, lime-rich soil of his Central Coast ranch closely resembled the renowned viticulture regions of France.

In 1973, Dr. and Mrs. Hoffman made the bold move from Southern California to Paso Robles, setting out to create a winery focused solely on estate-bottled premium wines. That same year, they welcomed the legendary Andre Tchelistcheff, the “dean of California Winemasters,” as a consultant. With Andre’s expert guidance, the Hoffman brothers began crafting wines that soon garnered prestigious accolades, including a gold medal at an international wine competition in London in 1975.

Tchelistcheff praised the Hoffmans, noting, “Love, devotion, and self-sacrifice are rare in this day but essential for making great wines,” and he believed the Hoffman brothers embodied these qualities. He also referred to HMR Vineyards as “a jewel of ecological elements,” predicting that some of the best white and red Burgundies would emerge from this exceptional region.
