The vineyard of Chatom Vineyards is nestled in the breathtaking Esmeralda Valley of the Sierra Foothills in Calaveras County. The valley was originally planted with low-field crops, fruits, and nut trees. When Gay Callan, owner and native San Franciscan, purchased the property in 1980, her vision was to plant a vineyard. Her first varietals were planted in 1981, totaling 21 acres of Chardonnay and Chenin Blanc. Today, the vineyard boasts 13 varietals planted on 65 acres, including Chardonnay, Semillon, Sauvignon Blanc, Cabernet Sauvignon, Merlot, Zinfandel, Syrah, Sangiovese and 5 Portuguese varietals. Rick Quinn and David Nichols started as neighbors, became friends, and eventually joined forces to fulfill their shared dream of creating a winemaking legacy in Paso Robles.

In 1997, Rick and David began planting vineyards, and by 1999, they established their family winery in the coastal mountains of the Willow Creek District. They chose the name Opolo to honor Quinn's Serbian heritage, referencing a rosé-style wine native to the Dalmatian Coast.

Although the modern winemaking era in Paso Robles was just beginning, Rick and David recognized the region’s immense potential. They focused on Zinfandel, a heritage grape of Paso Robles, as well as Bordeaux and Rhône varieties that would come to define the area's reputation.

Since then, Opolo has become a cornerstone of the Paso Robles experience, known for its widely acclaimed estate wines, warm hospitality, and legendary wine club. Today, Opolo offers a diverse selection of wines, including the iconic Mountain Zinfandel, limited-release reserves, and vineyard designates. Visitors are invited to explore the world of Opolo at their tasting room.

Deerfield is a winery where you're encouraged to sit and enjoy your wine. You're not crowded around a tasting bar, fighting for space and attention in order to sip your wine. Instead, the tasting takes place in a cave, with tables and chairs everywhere - encouraging everyone to have a seat, enjoy their wine and the sommeliers will be around to pour the wine.

Before founding Grey Fox Vineyards in 1996, the Arrigoni and Cecchi families spent much of their free time pursuing their passion for flying small planes. It was on these getaways that conversations turned to dreams of planting a vineyard and building a winery. Bruce's family had a tradition of making wine at home and Gary had a good chemistry background. A seed was planted and it began to take hold.
